ABOUT TATAR CUISINE

Having studied Tatar cooking traditions during the tour to Kazan, you will make sure that it is delicious, simple and healthy cuisine.
The main ingredient of the dishes is meat: lamb, beef, horse meat, duck, goose, chicken, but the use of pork is prohibited by the religion of Islam. In traditional recipes, such an ingredient as mushrooms is not also found, but nowadays housewives use it.
Rice, pea, millet, and buckwheat cereals are widely spread. When cooking it tatar people add vegetables or dried fruits.
Among the tatar recipes you can find a lot of baking of all kinds of sizes, shapes with a variety of fillings, yeast dough is used more often.
Another important ingredient is dairy products (sour cream, kefir, cottage cheese). Popular katyk, which is made by fermented milk. From katyk, in turn, tatar people prepare drink ayran or cottage cheese product “suzme”.
Among the most popular dishes with meat you will find:
- azu in Tatar style (stewed meat with potatoes, spices and pickles),
- tokmach (chicken noodle soup),
- bishbarmak (sliced boiled meat with boiled dough and onion, pepper).
Tatar pastries:
- balesh (closed pie made of unleavened dough with a filling made from poultry meat and potatoes),
- peremyach (meat pie fried in sunflower oil in a pan),
- echpochmak (triangular pie with finely chopped meat, onions and potatoes, the dish is served with a rich meat broth),
- kystybyi (fried flat cakes made of unleavened dough with mashed potatoes).
Snacks:
- kalzha (spiced meatloaf with vinegar, fried in a frying pan),
- kizlyk (sausage made from horse meat).
